How to Make a Cheap Steak Taste Expensive

Twice a month or so Jake and I get a craving for a nice steak dinner, but Lord knows we can't exactly afford two $20 steaks all that often. To curb the cravings without breaking the bank, I have come up with a recipe for making cheap steaks taste great. It took a long time to crack this, but I think I've got it down to a science! I chose to use top round steaks (Around $5 per steak). This process isn't very complicated but it does take a little time, between searing and baking. In the end, you'll thank me! PS. If you're looking for a healthy steak recipe, you've come to the wrong place. I have a butter obsession.
What You Need:
-2 Top Round Steaks
-1 Stick of Butter
-Course Sea Salt
-Black Pepper
-Olive Oil
-Cast Iron Pan
Step 1:
Take steaks out 30-40 minutes before cooking.
Step 2:
Preheat oven to 325F.
Step 3:
Pat steaks dry with a paper towel and season generously with salt and pepper on both sides.
Step 4:
Add about 3 tablespoons of olive oil and 2 tablespoons of butter to the skillet on the stove. Turn the stove on high and wait until you see light smoke. At this point, put the steaks in the skillet and time 1 minute. After 1 minute, flip the steaks and wait another minute.

Step 5:
Immediately transfer the entire skillet with the steaks inside to the oven. Set your timer for 15 minutes then use a thermometer to check the steak. I like my steaks to be at 145F, but it's all about preference. If your steak is not quite cooked, keep cooking it and checking every 5 minutes until it's at the temperature you like.
Step 6:
After the steak is done, transfer the steaks to a cutting board, place a pad of butter on each steak and cover with tin foil. Let these sit for 5 minutes. This will keep the juices from leaving the steak while also letting the butter soak into the steak.
The point of searing the steak then baking at low heat is to keep as much of the juices inside as possible. Top rounds are extremely lean and have almost no fat, so if they aren't treated with care, it'll come out like beef jerky. Pair your steak with your favorite side (I used rice) and a good beer. Enjoy!
xoxo,
Emily
